A new sub-genre of the classic American IPA has made its way out of California this year. A key ingredient to the style is an enzyme (amyloglucosidase) commonly used to convert malt sugars to alcohol in high-gravity beer styles like imperial stouts and barlywines.  By using the enzyme in a lower-gravity beer the result is a drying effect to the malt structure, so a focus of the hop bill can be achieved.  If you’re a fan of late addition hop IPA’s this is a style well worth exploring.
